What began as an ambitious experiment in Japanese craftsmanship on the banks of the Hudson has become one of Dutchess County’s most distinctive destinations. DASSAI BLUE produces only Junmai Daiginjo, the highest grade of sake—a distinction rare even in Japan—
and this October, the brewery celebrates three years of doing it here in Hyde Park.
