Maple syrup season is one of the sweetest signs of spring in Dutchess County. As winter begins to loosen its grip and daytime temperatures rise above freezing, maple trees start to release their sap. From late winter through early spring, that sap is carefully collected and boiled down in local sugarhouses scattered throughout the county.
Many of these small maple operations welcome visitors during the season. It’s a wonderful opportunity to see the steaming evaporators at work, learn how gallons of clear sap are transformed into rich golden syrup, and sample or purchase maple syrup and other maple treats right where they’re made.
