Misto Eats, Subversively Delicious
March 27, 2024

From Popup to Pickup at Misto Eats in Red Hook

By Cynthia Hochswender

Misto had already distinguished itself in Dutchess County as a premier source of soul-satisfying, tummy-warming, good food through years of catering, and popup meals at area venues.

A nomadic life is fun for a while, but Misto owners Wilson and Nadia Costa dreamt of setting roots, and having a professional kitchen of their own. They particularly wanted their new space to be in the town of Red Hook, but they couldn’t find one that suited their needs.

In autumn 2023, a site they had been eyeing in the center of town became available, and the Misto Eats market and cafe opened December 29.

The clean, bright shop has a counter for hot food and a refrigerator case for grab-and-go, all of which can be eaten at the handful of tables and chairs. There is also a freezer case with lasagna, pot pie, curry, and more.

The menu mixes comfort food with subversively exotic ingredients. Roast chicken might be enhanced with lemongrass; roasted sweet potatoes are cooked with shallots, garlic, and smoked paprika; slaw is made with kimchi.

Prices are moderate; portions are immense; the menu is always changing. “Wilson and I worked in so many kitchens where the menu never changed,” Nadia says. “We love that our offerings change.” Many of the foods on the menu are also gluten free, although you would never know it.
